The pigs are enjoying a sunny day and a treat. It's not quite February but we are already planning for and anticipating spring. Nellie, our red pig, has already begun practicing her nest-building skills. We anticipate our first piglets in two weeks (February 14). All of our seeds have arrived so planning for the vegetable garden is underway. All of our crops will again be heritage, rare, organic, and non-GMO. I can't wait to turn our sunroom into the greenhouse for the next few months. This year we will focus sap collection on the Black Walnut trees. We have lots! We did a sample run last year and it is really awesome. Fingers crossed that the bees are surviving this winter!
