Merguez, a North African lamb sausage, is a powerhouse of spicy and earthy flavours. Usually eaten grilled, it has become a popular street food in France served on a baguette with Dijon or mayo. Use it as a topping on pizza or to add flavour to tagines, soups or stews. It is heavily spiced with cumin, chili pepper,garlic, fennel and harissa which gives it a red colour.
